Seasonal Food

Settling into fall means I’ve switched out my clothes and shoes for warmer options. I’ve put more blankets on the beds, and even changed some decor around the house. What about food? Of course, the we know the specialty coffee drinks change, but what about your salad? Fall is a great time to add in soups, soft warm foods, and what is fresh from farmers now. While I still have spring mix in my refrigerator, I’m switching to cold weather greens, squash and pumpkins, and more root vegetables. I may roast them and add them to green salads or simply make a soup and put my greens in the soup. Cold smoothies will wait until spring unless they have a lot of grounding ingredients like pumpkin and cinnamon. While specialty coffee drinks don’t work well for me, this creamer is awesome to make a tea latte (or regular latte) at home!

Fall Spice Creamer

I cup of cashews ( soaked for 2-4 hours and rinsed)

1/2 tsp of cinnamon

1/4 tsp ginger

1/4 tsp cloves

1/8 tsp nutmeg

2 cups (or slightly more) of filtered water

Mix all of these ingredients in a high powered blender (or an Almond Cow). Strain milk into a jar with sieve or milk bag ( you can save the pulp to eat or mix into things). Add the following ingredients to the jar and shake well.

2 TBSP Maple Syrup

1/4 tsp vanilla

1/8 tsp Himalayan Pink Sea Salt

Use this as a creamer or latte base- warning it is so good you might want to just drink it straight!
