Pumpkin Protein Bites
Grain Free, Protein Packed Pumpkin Pie-like goodness
Servings 13 2 bites per serving
Calories 276 kcal
- 1 cup almond flour
- 1/4 cup ground flax seed
- 1/4 cup ground hazelnuts sub extra almond flour if desired
- 2 tbsp hemp seeds
- 1 tbsp chia seeds
- 1 1/2 tsp pumpkin pie spice
- 1/4 tsp sea salt optional
- 3 scoops Orgain Simple Protein Powder vanilla flavor, has peanuts
- 1/2 cup pumpkin puree not pumpkin pie filling
- 1 tsp vanilla
- 1/2 cup almond butter smooth, unsalted
- 1/4 cup honey
- 1/4 cup cacao nibs
Mix dry ingredients in a large bowl.
Add wet ingredients and mix well.
Shape batter into 1.5 in balls. Should stick together with gentle pressure.
Store in freezer or refrigerator.
I love all things pumpkin in the fall, but don't want to get things with fake flavoring and a bunch of added sugar. These are definitely a treat. Kind of like mini pumpkin pies. I keep them in the freezer because it helps me stick to one or two.
I have found that the brands of ingredients and environment can impact making protein balls - making them too dry or too sticky. If you find they are too dry you can add more pumpkin or honey. If they are too sticky, adding 1 more tbsp spoon of chia seeds and letting them sit for a few minutes will often do the trick.
